Production process

Vinification

Whole cluster crushing, alcoholic fermentation at 17°C and malolactic fermentation in temperature-controlled stainless steel vats. Partial vinification in oak barrels.

Ageing

Maturation on staves in traditional chalk pits for 42 months. After dosage, the wines benefit from a further resting period of 6 months before shipping.

Tasting Notes

Intense, bright yellow in colour. The bubbles are fine and persistent. The nose is complex and intense with hints of craie, white flowers and lime. In the mouth it is extremely elegant, notes of pain brioche, butter, exotic fruits and citrus with a pastry finish.

Pairing

Oysters, mussels in general and raw fish platters are excellent pairings. Also try it with creamy blue cheeses.
