Production process

Vinification

Whole cluster crushing, alcoholic fermentation at 17°C and malolactic fermentation in temperature-controlled stainless steel vats. Partial vinification in oak barrels.

Ageing

Maturation on staves in traditional chalk pits for 58 months. After dosage, the wines benefit from an additional rest period of 12 months before shipping.

Tasting Notes

The colour is bright yellow with slightly coppery reflections. On the nose notes of raspberry, strawberry, redcurrant, peach, gooseberry, citrus and spices. In the mouth it is gritty, savoury and powerful, with good structure and high acidity.

Pairing

This Champagne is perfect with fois gras canapés, cured meats and medium-aged cheeses, excellent with porcini mushroom risotto and fish soups.
