Production process

Vinification

Whole cluster pressing, alcoholic fermentation at 17°C and malolactic fermentation in temperature-controlled stainless steel vats.

Ageing

Maturation on staves in traditional chalk pits for 30 months. After dosage, the wines are rested for a further 6 months before shipping.

Tasting Notes

Straw yellow colour, crystal clear, fine and persistent bubbles. The nose is broad and deep, with subtle connotations of white flowers, citrus and white fruit. Straight and persistent on the palate, slight hint of pink grapefruit with a finish of candied fruit and brioche bread.

Champagne for all meals that pairs perfectly with seafood, oysters, and caviar.
