Production process

Vinification

Whole cluster crushing, alcoholic fermentation at 17°C and malolactic fermentation in temperature-controlled stainless steel vats.

Ageing

Maturation on staves in traditional chalk pits for 10 years. After dosage, the wines benefit from a further resting period of at least 6 months before shipping.

Tasting Notes

Very bright golden colour, with fine, elegant bubbles. The nose is very complex, mixing floral and fruity fragrances with dlci notes of wood. On the palate it reveals a lively effervescence, exhaling aromas of ginger, tobacco and toast. A wine with great roundness and persistence.

Pairing

We recommend daring pairings such as tripe and lampredotto. Beef or fish tartare are also suggested, as is roast pigeon.
